September is such a wonderful time in the Willamette Valley and we will be tasting through cheeses from the United States! The U.S. has been developing its own twist on many of our European favorites, utilizing diverse elevation, climate and breeds. We will discuss the terroir of American cheese and how the sea, mountains, volcanoes and animals all affect the flavors, textures and unique qualities we have grown to love.

June 2, 2018 – Erath Wines and Basque Cheese Pairing
For our summer wine and cheese pairing class, I will be selecting five Basque cheeses from the Basque region of Spain as well as a special little Basque style cheese from right here in the Northwest! September 15, 2018 Bring Us the Funk!
In collaboration with Portland Cook Shop, join us as we explore the Pacific Northwest’s Funk! Cheeses, wines, ciders and beers can be made using ancient methods of fermentation with wild yeast and cultures. We will guide you through some of our favorites, discussing the different styles and processes while pairing six locally produced beverages and six cheeses along with additional accouterments that will take each taste to the next level.
