In collaboration with expert local cheese makers and mongers, Sarah Mooney has brought a comprehensive collection of cheese courses to Portland since January 2016. We span in-depth focuses on tastings and pairings from specific regions, styles and artisan cheese makers to hands on cheese-making classes. We also offer beautifully executed cheese boards for your special events and parties.
Our cheese courses are small to insure a relaxed intimate pace, allowing you to ask as many questions as you have. By the end of class, we want you to feel confident in your knowledge of cheese making or within a specific region, style or flavor profile so you can easily order your next cheeses with certainty.

In 2011, Sarah Mooney left her job of 13 years in IT to pursue a Masters in Human Ecology and Sustainability in Pollenzo, Italy. From there she spent several months under the generous guidance of award winning cheese maker Giana Ferguson at Gubbeen Creamery in Ireland studying cheese-making and the fascinating effects of the Irish coastal terroir. Before coming on board with the great Steve Jones, Sarah worked for Black Sheep Creamery making delicious sheep milk cheeses. When she’s not guiding her students through sensory adventures, Sarah teaches classes up and down the west coast from B.C. to California and is perfecting a local twist on the decadent triple cream at home.
These classes look great, but what time will they be held? I’d love to sign up, but want to be sure it’s a time I can make it.

yes! that is pretty important information. Classes will be held 6:30 – 8:30 p.m. unless specifically stated.

Hi Josh, We’ve been working to change the website and it’s been inactive for quite awhile. We have 2 classes coming up though, which will be posted soon! One is a collaboration with Ground Breaker Brewery for a GF beer and cheese pairing on July 31st. The second is a burrata, mozzarella and ricotta class happening August 17th at Old Salt Marketplace. Both of these are in Portland. Tickets will be available very soon!
