In collaboration with expert local cheese makers and mongers, Sarah Mooney has brought a comprehensive collection of cheese courses to Portland since January 2016. We span in-depth focuses on tastings and pairings from specific regions, styles and artisanal cheese makers to hands on cheese-making classes.
Our cheese courses are small to insure a relaxed intimate pace, allowing you to ask as many questions as you have. By the end of class, we want you to feel confident in your knowledge of cheese making or within a specific region, style or flavor profile so you can easily order your next cheeses with certainty.
In 2011, Sarah Mooney left her job of 13 years in IT to pursue a Masters in Human Ecology and Sustainability in Pollenzo, Italy. From there she spent several months with Giana Ferguson at Gubbeen Creamery in Ireland studying cheese-making and the fascinating effects of the Irish coastal terroir. Before coming on board with Steve Jones, Sarah worked for Black Sheep Creamery making delicious sheep milk cheeses. When she’s not guiding her customers through sensory adventures at Chizu, Sarah teaches cheese-making classes in B.C. and California and is perfecting a local twist on the decadent triple cream at home.
