Portland Cheese Course


In collaboration with Steve Jones’ Cheese Bar, cheese-mongers Sarah Mooney and Madilyn Dillen are bringing a comprehensive collection of cheese courses to Portland beginning January 2016. From Introduction to Cheese Tasting and Pairings to a more in-depth focus on specific regions, styles and artisanal cheese makers, Madilyn and Sarah will guide you on your cheese adventure.

Our cheese courses will be small to insure a relaxed intimate pace and allow you to ask as many questions as you have. By the end of class, we want you to feel confident in your knowledge of a specific region, style or flavor profile so you can easily order your next cheeses with certainty.




In 2011, Sarah Mooney left her job of 13 years in IT to pursue a Masters in Human Ecology and Sustainability in Pollenzo, Italy. From there she spent several months with Giana Ferguson at Gubbeen Creamery in Ireland studying cheese-making and the fascinating effects of the Irish coastal terroir. Before coming on board with Steve Jones, Sarah worked for Black Sheep Creamery making delicious sheep milk cheeses. When she’s not guiding her customers through sensory adventures at Chizu, Sarah teaches cheese-making classes in B.C. and California and is perfecting a local twist on the decadent triple cream at home.



Madilyn’s love for cheese started at a young age, but her professional career began about five years ago at Whole Foods Market. She spent 2 and half years there before starting at Elephants Delicatessen and Zupans Market to specialize with more local stores. Madilyn now works full time at Cheese Bar and continues to share her passion for cheese.

    These classes look great, but what time will they be held? I’d love to sign up, but want to be sure it’s a time I can make it.

      yes! that is pretty important information. Classes will be held 6:30 – 8:30 p.m. unless specifically stated.
